Lentil salad with lemon and fresh herbs

Lentils are legumes. 96% of the US population don’t eat the minimum recommended amount of legumes. Adding them to your diet is one of the best things you can do to live a longer and healthier life. They are cheap, and quick and easy to prepare. Also, they offer anti-inflammatory effects and are packed with cholesterol-lowering fiber, protein, iron, zinc and folate among others. Eat lentils!


  • Boil lentils following the package instructions. Drain well in a colander.
  • Place lentils in a mixing bowl. Add the remaining ingredients and stir well.
  • Refrigerate for at least an hour and serve cold. Enjoy!
