Easy cream of butternut squash

Butternut squash provides amazing antioxidant and anti-inflammatory benefits. It's an excellent source of immune-supportive carotenoids (vitamin A precursor) and free radical-scavenging vitamin C. It's also a very good source of dietary fiber, which 97% of Americans don't get enough. It even contains omega-3 fatty acids among many other health-promoting nutrients. 

This nutritious starchy vegetable will keep you full and satisfied!

Directions

  1. Add all the ingredients into a large saucepan. Then add water to cover the vegetables and bring to a boil. Reduce heat and simmer for 25-30 minutes or until the vegetables are tender.
  2. Puree soup with a blender or hand blender. (If you want a thicker texture, pull out some of the water before pureeing. Or if you think it's too thick, add more water to it).
  3. Serve hot or cold and enjoy! Store leftovers in the fridge for 3 or 4 days in an airtight container. You can also freeze them.
