Easy cream of butternut squash
Butternut squash provides amazing antioxidant and anti-inflammatory benefits. It's an excellent source of immune-supportive carotenoids (vitamin A precursor) and free radical-scavenging vitamin C. It's also a very good source of dietary fiber, which 97% of Americans don't get enough. It even contains omega-3 fatty acids among many other health-promoting nutrients.
This nutritious starchy vegetable will keep you full and satisfied!
- Add all the ingredients into a large saucepan. Then add water to cover the vegetables and bring to a boil. Reduce heat and simmer for 25-30 minutes or until the vegetables are tender.
- Puree soup with a blender or hand blender. (If you want a thicker texture, pull out some of the water before pureeing. Or if you think it's too thick, add more water to it).
- Serve hot or cold and enjoy! Store leftovers in the fridge for 3 or 4 days in an airtight container. You can also freeze them.
