Creamy mushroom soup
This creamy soup is delicious and very nutritious. Believe it or not, the cheap and widely available plain white mushrooms are among the most antioxidant rich. Mushrooms contain beta glucans, which boost immune function. They may contain a naturally-occurring toxin, so it them cooked. At Y Nut we recommend eating mushrooms every week.
- Add the sliced onion to a heated pan. Saute at medium heat. No oil is needed but keep mixing so it doesn't burn. When it starts caramelizing, add 2 tablespoons at a time of water (or vegetable broth) and keep sauteing for a few minutes.
- Add the garlic, mushrooms, salt and pepper to taste and keep sauteing for 5 to 10 more minutes.
- Then add 1/2 to 1 cup of oats depending of desired thickness and 6 cups of water. Bring to a boil and simmer for 10 minutes.
- Lastly, blend well using a blender or hand blender. Serve and enjoy!
