Arugula & chickpea salad
I made this salad with some of the ingredients I had left in the fridge. I did not have much time so I decided to put some ingredients together and make a healthy salad. Nothing fancy but very colorful and tasty. The dressing is very easy and fast to make. I love the taste that the ground flaxseed add to it, plus it is a great source of omega 3 fatty acids which are essential in our diet. The chickpeas make this salad more filling. Eating healthy and delicious food has never been so easy!
- To make the dressing, mix the lemon juice, balsamic vinegar, ground flaxseeds, and salt and pepper to taste. Mix well.
- Add all othe ingredients for the salad and finally the dressing. Mix well and serve.
Always keep ground flaxseeds stored in an airtight container in the fridge in order to make this dressing quickly or use in other recipes. You can buy it ground or whole and grind them in a food processor.
You can replace the chickpeas for any other legume. Always keep cans on hand in case you don't have time to cook them when you need them. If you use canned legumes, make sure you buy the ones with no salt added and if not possible, make sure to rinse them well to reduce the amount of salt.
